How to Use a Honing Steel and a Diamond Sharpening Steel
Using a honing stone on a regular or weekly basis is an easy way to care for your knives. If you use a honing rod as part of regular maintenance for your knives then it will reduce the need for constant sharpening.
A honing or diamond sharpening steel rod or stone does not necessarily sharpen your knife, but rather straightens the small burrs on the edge.
Following these easy steps will keep those edges straight on your knife:
- Gently sweep your knife edge in a diagonal motion from the heel to tip on an 18 to 20 degree angle. Repeat this 3-4 times on each side of the steel rod. Keep in mind to always do equal amounts of sweeps on each side of the blade, this will ensure a straight edge. Once you have completed your sweeping process several times, end with with one sweep per side. Now try your knife! If your knife is still not cutting then you may want to repeat the entire honing process again. If your knife still seems to have a dull edge and will not cut, it is time to sharpen your knife.
- After using a hone or diamond sharpening tool you should clean it with a mild soap (dish soap is fine) about every 2-3 uses. Dry, then store your honing steel in a drawer or block. Cleaning your hone will keep it free from any fine knife particles that could possibly decrease the performance of the steel.
